Tip of the Week

A baked potato, with skin, has about half the RDA for vitamins C and B6, plus about 20% of the RDA for vitamins B1, B3,and potassium and only slightly less for magnesium. It also gives you about 5 grams of protein and 3 grams of fiber. Theoretically, you could live on just potatoes for a while, and some populations have used them as the basis of their diet at various times. True, you could live on just pork chops too (no carb), but you would eventually get scurvy from lack of vitamin C. A varied diet is still best, so there`s room for (and nutrition in) both the potato and the pork chop.
